Sweet Potato Greens are a delectable treat, similar to spinach in their taste but lighter, full of Vitamins A and K, and readily available at this time of year

Ingredients

  • 2 cups sweet potato greens
  • 1 tbs olive oil
  • 2 tsp ginger micro grated
  • 1 tbs garlic chopped
  • 1/4 tsp salt
  • 1/4 tsp pepper freshly ground

Wash greens and chop roughly. Saute in olive oil for 2 minutes. Add garlic, ginger, salt and pepper. If using stems, cut them up and saute about 5 minutes before adding the leaves, which are cooked just until wilted.
